Website design By BotEap.comMelt the margarine in a hot skillet over medium heat. Don’t let the butter turn brown. Add the green pepper and 2 tablespoons of onion. Then sauté the bell pepper and onion until the onion is translucent. Next, add the almonds, breadcrumbs, oregano, a tablespoon of lemon juice, coriander, and salt. Mix well. Place the filling in the center of each tilapia fillet. Then roll up each fillet and secure with toothpicks. In a shallow roasting pan, combine the remaining 2 tablespoons onion, water, garlic, bay leaf, red pepper, and the remaining 3 tablespoons lemon juice. Place the tilapia fillets in the skillet and bake in a 400 degree F oven for 30 to 35 minutes, basting occasionally until the tilapia flakes easily. Remove the tilapia to a serving platter and garnish with thin strips of lime peel.
